Flädle


Flädle is a southern German dish from the region of Schwaben, derived from savory pancakes. In Austria Flädle is called Frittaten; the word frittaten is derived from the Italian frittata. In other parts of Germany, it is known as Eierkuchensuppe, derived from the regional name for Eierkuchen.
The Flädle are made as plain crepe-style pancakes, then tightly rolled up and sliced into coils, and then usually served in a clear soup or beef broth as Flädlessuppe.
